Korzhiki on sour cream - the basic principles of cooking

Korzhiki are bakery products of relief or round shape. They are prepared on the basis of milk, kefir, cottage cheese and sour cream with the addition of cream fat. The notch is soft and tender, with a crispy crust.

Consider the most popular pastry recipes for which the dough is prepared on the basis of sour cream. In addition to the dairy product, you will need sugar, flour, soft butter, soda, slaked with lemon juice or vinegar, eggs. All ingredients are combined and kneaded with soft dough, in which you can add nuts, raisins or poppy seeds. The baked goods will be fragrant if you put vanilla, cinnamon or other flavoring in the dough.

Roll out the dough into a layer on a table sprinkled with flour, a thickness of not more than a centimeter. In a glass or a special form, squeeze out the blanks of future shortcakes. Transfer them to a baking sheet and bake for an hour.

Korzhiki on sour cream turn out much softer than cooked on kefir or milk. Ready-made pastries are laid out on a dish, served with hot cocoa, tea, chocolate and milk drinks.

Recipe 1. Korzhiki on sour cream with orange aroma

Ingredients

sour cream - 120 ml;

a pinch of salt;

granulated sugar - 150 g;

zest of one orange;

honey - 140 g;

lemon juice - 25 ml;

chicken eggs - two pcs.;

baking soda - a pinch;

refined vegetable oil - 10 ml;

flour - stack. with a slide;

milk - 50 ml.

Cooking method

1. Break the chicken eggs and gently separate the yolks from the proteins. Yolks are placed in a deep cup, add sour cream and shake well. Pour 100 g of granulated sugar into the mixture and add liquid honey. Pour the vegetable oil, salt and rub the zest of the orange. Shake everything with a mixer until smooth. We extinguish the baking soda with lemon juice, add to the mixture and stir.

2. Gradually sift flour into a cup, stirring after each addition. Knead soft dough, which should stick slightly to your hands.

3. Roll it with a thickness of a little less than a centimeter on a flour dusted surface. Squeeze out round cakes with a wide glass or a special shape.

4. We cover the baking sheet with baking paper. We shift shortbread onto it. Combine the remaining sugar with milk, whisk and grease with the resulting mixture of the workpiece.

5. We turn on the oven for 190 C. We send a baking sheet with crusts into it and bake for ten minutes. We take out the baking sheet, slightly cool, remove the crusts from the parchment and transfer to a plate.

Recipe 2. Korzhiki on sour cream with fried seeds

Ingredients

Dough

wheat flour - 400 gr.;

salt;

baking powder bag;

large eggs - two pcs .;

half a stack. granulated sugar;

margarine - 60 gr.;

incomplete stack. sour cream of any fat content;

fried seeds.

Cooking method

1. Sift the flour into a deep bowl, add a pinch of salt and a baking powder. Shuffle. If there is no baking powder, you can use soda, only in this case it is added not to the dry mixture, but to sour cream.

2. Pour white sugar into the sifted flour, beat in the egg and put soft margarine and sour cream. Knead a dough that does not stick to your hands. Gather it in a ball, cover with a towel and leave to rest for 20 minutes. Turn on the oven at 180 C.

3. Line the baking sheet with parchment. Roll out the dough into a flat cake a little less than a centimeter thick on a table crushed by flour. Squeeze out round blanks. Put them on a baking sheet. Shake the egg thoroughly and grease their crusts. Sprinkle with peeled and roasted seeds from above. Press them lightly into the dough with a fork.

4. Put the baking sheet in the oven and bake for 20 minutes at 180 C. Remove the finished cakes from the oven, cool to a warm state and transfer to a dish. Serve with milk.

Recipe 3. Korzhiki on sour cream with margarine

Ingredients

2 g of baking soda;

wheat flour - kg;

large eggs - three pcs .;

iodized salt - a pinch;

fat sour cream - a glass;

vanillin - a bag;

margarine - 180 g;

300 g cane sugar.

Cooking method

1. Drive the eggs into a deep bowl. Add sour cream and sprinkle cane sugar. Beat the ingredients until the crystals are completely dispersed. Now add vanillin, salt and slaked soda. Stir again. Set aside the sour cream mixture.

2. Put soft margarine in a separate bowl. Sift flour through a sieve and add to margarine. Grind everything with your hands into small crumbs. Transfer it to a sour cream mixture and knead a soft dough.

3. Sprinkle the surface of the table with flour. Roll the dough on it into a layer, a little less than a centimeter thick. Squeeze the circles out with a wide glass and put them on a baking sheet, greasing it with oil.

4. Preheat the oven to 180 C. Put a baking sheet with blanks in it and bake for half an hour. Remove the baked goods from the oven and cool directly on the baking sheet.

Recipe 4. Korzhiki on sour cream with bananas and coconut

Ingredients

110 g soft butter;

25 g coconut flakes;

large egg;

Apple vinegar;

165 g of sugar;

25 g of honey;

200 g sour cream;

cornmeal - half a glass;

two bananas;

300 g of wheat flour;

3 g of baking soda.

Cooking method

1. Remove the oil from the refrigerator at least an hour before cooking. Put it in a deep dish, leaving a small piece, add sugar and beat well until fluffy. Add sour cream and egg. Beat again until smooth.

2. Peel the bananas. Cut them in half and chop into thin slices. Put in a preheated pan with melted butter. Add honey and simmer over low heat, stirring constantly, for about five minutes. Cool.

3. Transfer the stewed bananas to the sour cream mixture, add the sifted flour and add the baking soda, having previously extinguished it. Mix well to make a dough of homemade sour cream consistency.

4. Cover with Deco parchment. Spread the dough with a spoon, forming round cakes. Place the billet in a preheated oven for up to 190 C for forty minutes. Ready-made pastries can be crushed with powdered sugar.

Recipe 5. Korzhiki on sour cream with poppy seeds

Ingredients

30 g of powdered sugar;

two stacks. wheat flour;

half a stack. sour cream;

3 g of baking soda;

50 g of poppy;

half a stack. granulated sugar;

butter - 60 g;

two large eggs.

Cooking method

1. Beat one egg into a deep dish and beat it with a whisk or mixer until a light foam forms. Add sour cream, granulated sugar and soda. Whip everything again.

2. Melt the butter by placing dishes with it over a pot of boiling water. Refrigerate and add to other ingredients. Send the poppy here. Stir and add a little sifted flour, knead a soft, supple dough. Wrap it in film and send it for forty minutes in the cold.

3. Free the dough from the film and lay it on the table, sprinkled with flour. Roll it a little less than a centimeter thick. Using a special shape or a wide glass, squeeze out round blanks. Line the deco with baking paper and spread the cakes on it.

4. Shake the egg thoroughly with a fork until smooth. Lubricate the blanks with a beaten egg. Place in the oven and bake until golden brown. The temperature should be 180 C. If desired, put the finished baking on a wire rack and pour with melted chocolate.

Recipe 6. Korzhiki on sour cream with cottage cheese and bran

Ingredients

two stacks. wheat bran;

salt;

100 g fat-free cottage cheese;

50 g of granulated sugar;

100 g low-fat sour cream;

20 ml of vegetable oil;

egg.

Cooking method

1. Sift bran, dry in the oven at low temperature, put in a coffee grinder and grind to the state of flour.

2. Rub the cottage cheese through a sieve. Add wheat bran to the curd mixture and mix. Add sour cream, granulated sugar, beat the egg and salt. Stir everything thoroughly and leave for 20 minutes to swell the bran.

3. From the dough, form round cakes and put them on a baking sheet, previously lubricating it with vegetable oil. Bake shortcakes for half an hour. Sprinkle hot baked goods with powdered sugar and cool.

Korzhiki on sour cream - tips and tricks

  • You can sprinkle crust on top with fried seeds, peanuts, walnuts or sesame seeds.
  • If you add cocoa to the flour, you will get cakes with a chocolate flavor.
  • You can add pieces of dried apricots or prunes, raisins, nuts to the dough.
  • Adjust the amount of sugar to your taste, if you like sweet pastries, you can add it more than indicated in the recipe.
  • Cinnamon, vanillin and citrus zest will make the pastries fragrant.
