Okroshka is an indispensable dish in the summer heat.

It is tasty, healthy, and also perfectly refreshes and nourishes.

There are many options for making cold soup.

Some cook okroshka on kvass, others on kefir, whey, mineral water.

However, the easiest and at the same time acceptable for many will be cooking okroshka on the water, and all because the water does not have a specific taste that can interrupt the taste of the ingredients in the dish.

Okroshka on the water - general principles of preparation

The principle of cooking okroshka on water is not much different from any other kind of okroshka. All products are washed, those that require heat treatment are boiled, others are simply cleaned. After everything is crushed into cubes of the same size and mixed.

Spices and salt are added to the resulting salad to taste. The water itself is not poured into a common pan, but directly into a serving plate. The amount of water is regulated based on preference.

To give a bright, but not intrusive taste notes, sour cream, mayonnaise, lemon juice or citric acid, vinegar, mustard, chopped horseradish are added to the water.

Recipe 1. Okroshka classic on the water

Ingredients:

• three liters of water;

• 700 grams of lean beef or veal;

• kilogram of potatoes;

• ten eggs;

• 300 grams of mayonnaise;

• one lemon;

• two tablespoons of mustard;

• salt pepper;

• green onions, parsley and dill leaves.

Cooking method:

1. Pour water into the pan, put in it a washed piece of beef, cook until tender.

2. The potatoes are thoroughly washed, boiled, without removing the peel, in another pan. Next, carefully remove from the pan and clean.

3. Rinse green onion feathers and dill and parsley leaves in cold water and chop finely.

4. Boil hard-boiled eggs, cool, laying in cold water. We clear from a shell. We remove five yolks, we will not need them, for such a volume of okroshka ten proteins and five yolks are enough.

5. Wash the cucumbers, remove the peel with a thin layer.

6. Cut all prepared ingredients into small cubes.

7. Put everything except greens and yolks into one large container. Mix by adding salt and pepper to taste.

8. Crumple five yolks with a fork, add mustard, mayonnaise and lemon juice to taste.

9. Dilute this mixture with water.

10. Put the blank for okroshka in plates, put greens to taste, season with prepared water.

Recipe 2. Okroshka on the water with sausage and ham

Ingredients:

• one and a half liters of water;

• three eggs;

• three potato tubers;

• two cucumbers;

• two radishes;

• 300 grams of cooked sausage without fat;

• 200 grams of chicken ham;

• a tablespoon of sour cream;

• salt;

• a small bunch of dill and green onions;

• a third of a teaspoon of citric acid.

Cooking method:

1. We wash all vegetables, boil the potatoes in their skins, then cool and peel.

2. Cut the radishes, cucumbers and boiled potatoes into small cubes.

3. Dice the same size as the vegetables, and cut the sausage with ham, as well as hard-boiled eggs.

4. We chop the washed greens.

5. Put all the chopped ingredients in a pan, fill with filtered or pre-boiled and cooled water.

6. Refill okroshka with sour cream, salt and citric acid on the water.

7. Pour the soup into plates, serve with fresh sour cream.

Recipe 3. Okroshka on the water with vinegar and sour cream

Ingredients:

• a pound of potatoes;

• four eggs;

• three fresh cucumbers;

• 400 grams of sausage;

• 250 grams of sour cream;

• a large bunch of dill;

• a tablespoon of vinegar essence;

• to taste water, salt, pepper.

Cooking method:

1. Peel the cooked potatoes, as well as hard-boiled eggs.

2. Cut the potatoes into small cubes.

3. The eggs, along with the sausage, are grated coarsely.

4. Rinse the cucumbers thoroughly, cut two into small cubes, and rub one on a grater.

5. Dill, remove thick branches, leaving only tender leaves, finely chop.

6. Pre-boiled water is cooled in the refrigerator, then mixed with vinegar essence, ground pepper and salt, sour cream.

7. Mix vegetables, herbs, sausage and eggs, fill with water.

Recipe 4. Okroshka on sparkling water and kefir

Ingredients:

• one liter of sparkling water without taste;

• 200 grams of cooked sausage;

• six eggs;

• four small fresh cucumbers;

• radish to taste;

• three potatoes;

• a bunch of dill;

• a bunch of green onions;

• liter of kefir;

• salt;

• lemon slices.

Cooking method:

1. Cut the boiled potatoes into cubes.

2. We clean hard-boiled eggs and finely chop them in any convenient way.

3. All the cucumbers are mine, we cut three into small cubes, one we rub coarsely on a grater.

4. Cooked sausage, which can also be replaced with boiled beef or chicken, cut into small pieces.

5. Rinse the radish, remove the peel with a thin layer so that it does not get bitter, rub the vegetables on a coarse grater.

6. Green onion and chop dill.

7. Mix all the ingredients in a large container, salt to taste.

8. In another container, mix kefir and water. It is important that both ingredients are very cold.

9. Pour water with kefir into okroshka immediately before serving.

10. In each plate we put the thinnest slice of lemon.

Recipe 5. Okroshka on water and kvass with chicken

Ingredients:

• a pound of chicken;

• a pound of potatoes;

• a pound of cucumbers;

• four eggs;

• parsley, dill, onions;

• sour cream for dressing;

• spices and salt;

• kvass and water in equal proportions.

Cooking method:

1. Parsley, green onions and dill are taken in large quantities. We thoroughly wash all the greens, remove the thick stems, finely chop the feathers of the green onion and the leaves of dill and parsley. We spread the greens in a deep bowl, salt a little, mash with your hands until the juice is allocated.

2. Rinse the chicken fillet, boil until tender, putting it in a pan with slightly salted water. Gently remove from the broth, cool, chop into cubes.

3. Potatoes, previously boiled in their uniforms and cooled, peeled and chopped in small cubes.

4. We mix greens with potatoes, chicken meat.

5. Add finely chopped cucumber, boiled eggs, grated on a coarse grater.

6. Pour okroshka with water and kvass, mixing both ingredients in equal proportions.

7. Fill okroshka with sour cream on the water just before serving in a bowl or plate.

Recipe 6. Okroshka for mayonnaise and water

Ingredients:

• two liters of water;

• four potatoes;

• two salad cucumbers;

• five eggs;

• 350 grams of sausages;

• green onions, dill;

• three tablespoons of mayonnaise;

• salt;

• a teaspoon of grated horseradish;

• a teaspoon of citric acid.

Cooking method:

1. Boil eggs and potatoes separately from each other.

2. While the products requiring heat treatment are prepared and cooled, we cut cucumbers and sausages into small cubes.

3. Rinse the greens and chop finely.

4. Cut the cooked potatoes into small pieces, rub the egg whites on a coarse grater.

5. Crumple the egg yolks with a fork, mix with mayonnaise and grated horseradish, put salt, citric acid and black pepper in the mass.

6. Mix the mixture of yolks and spices with water.

7. Stir the potatoes with cucumbers, sausages, herbs.

8. Fill okroshka with water.

9. We taste, if there is enough salt, spiciness and acid, serve.

Recipe 7. Vegetable okroshka on the water with green peas

Ingredients:

• 200 grams of green canned peas;

• 0.5 liters of water (possible with gas);

• 0.5 liters of fresh kefir;

• four eggs;

• two potatoes;

• carrot;

• a bunch of green onions and dill;

• salt, vinegar.

Cooking method:

1. Dry the washed potatoes and carrots and put them on the wire rack in the oven. Bake until cooked, cool, peel.

2. Cut root vegetables and hard-boiled eggs into small cubes.

3. Rinse the greens, shred, transfer to a deep bowl. Crumple a little with your hands to stand out the juice.

4. We put carrots and potatoes to the greens, here we transfer the eggs.

5. Add green peas, salt and pepper. Mix.

6. In another container, mix water with kefir, add a little vinegar to taste.

7. Serve okroshka in this way: put the workpiece in plates, put cold water mixed with kefir and vinegar in a glass next to each so that everyone can pour the desired amount of liquid.

Recipe 8. Okroshka on the water with herring

Ingredients:

• 150 grams of slightly salted herring;

• 150 grams of boiled chicken;

• two eggs;

• two cucumbers;

• three potatoes;

• feathers of green onions;

• dill leaves;

• one and a half liters of water;

• to taste sour cream and salt.

Cooking method:

1. Rub on a coarse grater peeled cucumbers.

2. Peel hard-boiled eggs and boiled potatoes, peel and shell, cut into small cubes.

3. We chop the feathers of green onions in small rings.

4. Mix all prepared, chopped products, add boiled and finely chopped chicken.

5. If necessary, clean the herring from the skin and seeds, leave only the fillet, which is then cut into small pieces.

6. Add herring to other products.

7. First, salt okroshka to taste, then pour cold water.

8. Serve with sour cream, if desired, sprinkled with fresh dill.

Okroshka on the water - tricks and useful tips

• Use only filtered water for okroshka; in extreme cases, take cooled boiled water.

• To cook vegetables quickly, choose small tubers.

• If the okroshka on the water includes onions, chop it finely and be sure to remember a little with your hand before laying to remove the bitterness and crunch unpleasant in the okroshka.

• Cut all the ingredients into medium-sized cubes of approximately the same size. It is very fast and convenient to do this with a special device for cutting vegetables.

• Chill okroshka with water immediately before serving.

• Add more greens and fresh cucumbers, radishes to the okroshka. Thanks to these products, okroshka is especially refreshing.

• You can also put any other ingredients in okroshka on the water to your liking.

• Do not put meat and sausage with fat in okroshka.

• In addition to cooked sausage and meat, you can also put uncooked smoked or semi-smoked sausage in the okroshka, making a dish with a special piquant taste and aroma.

• If you do not just add the yolks to the okroshka, but first grind the yolks with greens and salt, then the cold soup will turn out to be a beautiful saturated color.

• If you made a large amount of okroshka, you can make a salad from the rest by seasoning it with sour cream or mayonnaise.

• Be sure to keep the workpiece for okroshka with water before mixing and serving in the refrigerator for at least 20-30 minutes.

• For any of these recipes, you can use not only ordinary water, but also mineral water with or without gas.
